Overnight oats are an incredibly convenient option for a delicious summer breakfast. Unlike traditional fresh porridge, overnight oats are served cold, the length of time the oats spend in the milk making them turn soft without the use of heat. This creates a wonderful desert feel to this breakfast, the consistency almost like that of a cool, fruity parfait, perfect for the start of a hot summers day. Moreover, this breakfast can be prepared the night before, for a stress free breakfast that need only be grabbed from the fridge.

Serves 2:
  • 1 cup Rude Health Porridge daily oats
  • ¾ cup Rude Health Coconut milk
  • 1 tbsp maple syrup
  • 1 heaped tbsp. goji berries
  • ½ cup thick coconut yogurt
  • ½ cup strawberries
  • 1 tsp. pumpkin seeds

Directions:
  • Measure out oats and milk and mix both together in a Tupperware container
  • Add goji berries and maple syrup and mix well
  • Seal the container and leave in fridge for at least 6 hours, preferably overnight

  • In the morning, the porridge oats should be soft and have soaked up the milk and the dried goji berries should also have become soft and more juicy
  • Spoon an equal measure of porridge mix into 2 large glasses
  • Top the porridge with coconut yogurt
  • Then layer the strawberries, chopped or whole, on top of the coconut yogurt
  • Sprinkle with pumpkin seeds and dig into your refreshing “desert parfait” breakfast
