These hearty, healthy cookies are without a doubt one of the easiest treats to whip up, with total cooking time only 25 minutes, perfect for a last minute sweet craving. Despite these cookies being a sweet treat, there is 0 artificial sugar in them! All of the sweetness comes from the natural sources of the dates and banana, so you can eat as many as you want, guilt free!
Ingredients:
- 2 cups of soaked dates
- ½ cup nut butter
- 1 banana
- ½ cup plain flour
- ½ cup oat flour using Rude Health Porridge Oats
- 1 cup whole oats
- ¼ tsp baking powder
- ¼ tsp salt
- Almonds for decoration if desired
Directions:
- Soak the dates in warm water and set aside
- Blend ½ cup oats on high in order to get oat flour
- Blend the now soft dates, nut butter and banana together in a blender
- In a mixing bowl, add the oat flour, plain flour, oats, baking powder and salt and stir well so the dry ingredients are evenly distributed
- Add the wet ingredients from the blender into the mixing bowl and stir the entire mixture together to create a wet dough
- Prep an oven tray with parchment paper
- Spoon small dollops of mixture onto the paper with even spacing to allow for the cookies to expand
- Press an almond into the center of each cookie
- Bake for 15 minutes
