Nutella balls

The flavor of nutella was one of my favorites before going vegan, but after some experimenting, I can confirm that I have achieved the same nutty, chocolaty taste of goodness with none of the bad stuff involved! These energy oat + nut balls are packed with healthy fats and nutrients to help keep you going and as a perfectly sized midday snack are super handy to just keep in the fridge to grab whenever you are feeling peckish.

Nutella
Ingredients (makes 15):
  • 15 soaked dates
  • 1 cup cashews
  • 1 cup hazelnuts
  • ½ cup Rude Health Porridge Daily Oats
  • ¼ bar dark chocolate/2 tbsp raw cacao powder

Directions:
  • Cut the stones out of the dates and set them aside to soak in some warm water
  • Measure out the nuts and oats
  • If using chocolate bar, cut the ¼ into smaller pieces
  • Mix all ingredients in a food processor until mixture becomes a more clumpy and sticky consistency, with the nuts as blended as possible
  • Now measure out spoonful’s of the mixture and roll into small balls
  • Put finished balls into a fridge for 15-20 minutes and then they are ready to eat as you wish
  • Enjoy!
