If you have a look at granola’s in stores today, you are most likely to encounter an assortment of added sugars and artificial flavorings – not something you want to fill your body with first thing in the morning! So why not make your own? The basic premise of granola is merely roasted oats and nuts, tossed in whatever flavor you fancy, to create a delicious breakfast cereal that doesn’t leave your blood sugars sky high. One of my favorite flavor combinations is the natural sweetness of maple syrup with baked coconut chips, an own brand product that can be found in SOIL and is a perfect addition to any breakfast dish. Here is a recipe for this delicious maple-coconut goodness, free of any high fructose corn syrup and packed full of super foods for you to start your day right!

Ingredients:
  • 2 cups of Rude Health’s rolled oats
  • ½ cup almonds
  • ½ cup pumpkin/sunflower seeds
  • ½ cup rice puffs
  • ¼ cup chia seeds
  • 3tbsp maple syrup
  • ½ cup baked coconut chips
  • ½ cup goji berries
  • ½ cup walnuts
  • 2 tbsp coconut oil

Directions
  • Preheat oven to 150 degrees celsius
  • Mix the oats, nuts, seeds, chia and rice puffs in a large mixing bowl
  • Drizzle on maple syrup and coconut oil and mix well to ensure even distribution over all of the ingredients
  • Line a large tray with greaseproof paper
  • Spread the mixture evenly across the tray
  • Place in oven and every 5-10 minutes take it out and shuffle/turn over the mixture so that it bakes evenly
  • Once fully baked – which should take about 30 mins, remove from oven and place mixture back into mixing bowl
  • Let cool for 15 mins
  • Add the goji berries, SOIL baked coconut chips and mix into the granola
  • And voila, there is your healthy, superfood filled homemade granola in just 40 minutes!
